We now have a 12’ X 16’ insulated root cellar built into the side of a hill. There is a fancy cooler door on it, and a simple cooling system for early fall veggies. We will be experimenting with long-term storage of potatoes, onions, garlic, winter squash, cabbage and other crops. Next door, is a new packing facility with indoor and outdoor washing areas, storage and our walk-in cooler. Both of these facilities are structurally complete, but we’ll spend the next few months ‘furnishing’ them and getting ready for the season. Here is a picture when cousins were visiting in November (and there was still snow).

New structures for the New Year!
